Ingredients

  • flour: 1 cup
  • salt: 0.5 tsp
  • butter: 9 Tbsp (8 tbsp for the dough and 1 tbsp for the topping)
  • water: 2 Tbsp
  • artichoke hearts: 0.5 cup (cooked fresh or canned, finely chopped)
  • spinach: 6 oz. (squeezed and finely chopped)
  • shallot: 0.5 cup (minced)
  • lemon zest: 2 tsp (grated)
  • egg: 4 piece (large)
  • milk: 1 cup
  • heavy whipping cream: 0.5 cup
  • goat cheese: 4 oz.
  • kosher salt: 1.5 tsp
  • black pepper: 0.25 tsp
  • chives: 2 Tbsp (minced)

  1. Take a medium bowl and whisk salt and flour in it. Then cut the butter into pieces and mix the mass with your hands. Add a bit of water into the flour mixture and knead the dough.

  2. Form a flat piece of dough and wrap it into plastic wrap. Leave in a fridge for an hour or so.

  3. Take the dough out from the fridge, leave it at room temperature for 10-15 minutes and roll it out.

  4. Then drape it over the pie pan and trim the edges. Leave in a fridge for half an hour.

  5. While the dough is in the fridge, let’s cook the topping. Place a saucepan on medium fire and melt butter in it. Add minced shallot and fry for about 3-4 minutes. Then remove the saucepan from fire.

  6. Pre-heat the oven to 190 C (375 F). While the oven is heating, take another bowl and beat the eggs in it. Add goat cheese (or shredded hard cheese) and whisk the ingredients to get a smooth mass. Then add milk, salt, black pepper, cream, chopped artichokes and spinach, lemon zest, fried shallot and the chives.

  7. Take the pie pan from the fridge and pour the topping inside. Place it into the oven and bake for about 10 minutes. Reduce the fire to 175 C (350 F) and keep baking for about 30 minutes more.

  8. Take the quiche from the oven and let it cool down. Slice, serve and enjoy!
