Chicken salad with pancake rolls is an ideal variant of nutritious supper, when the whole family gathers at the kitchen table. The dish is easy to cook, but the ingredients it consists of are so unusual that they will make the taste of the dish stunning!
- pancakes : 4 piece (thin)
- oil : 2 Tbsp
- chicken fillet : 200 g (boiled)
- cucumber : 1 piece
- garlic : 1 clove
- mozzarella : 125 g
- cream : 100 g
- salt : 0.5 tsp
- black pepper : 1 pinch
- fennel : 1 bunch (chopped)
Stages of cooking
Bake thin pancakes using your favorite recipe. I added 2 tablespoons of oil into the batter to make them softer.
Spoon cream on the pancakes and spread it across the surface of each pancake.
Dredge each pancake with chopped fennel.
Roll the pancakes and cut them into pieces about 1.5-2 cm thick.
Cut the chicken fillet and a cucumber into small cubes.
Mix the chicken fillet, cucumber, the rest of the fennel, chopped garlic and mozzarella sliced into circles. Add salt, black pepper and cream.
Spoon the salad in the middle of a large serving dish. The salad is now ready!
Decorate the dish with pancake rolls, sliced cucumber and fennel. Enjoy the salad!
