  1. Prepare the ingredients. You may also replace the cow milk with coconut milk.

  2. In a saucepan mix milk, tapioca and sugar. Bring the mixture to a boil over medium heat, stirring constantly. When the mixture begins to boil, reduce the heat to a minimum and cook for 15-20 minutes, without stopping stirring. 
    Separate the whites from the yolks, grind the yolks with a whisk or fork.

  3. Constantly stirring, add one tablespoon of a hot mixture of tapioca with milk to the yolks. If you add the whole mass to the yolks at once, the yolks will curl. Thus mix half the mass of tapioca with milk with the yolks.

  4. Transfer the mixture of tapioca with yolks to the saucepan with the remaining mass, mix, return to the stove and on low heat bring the mixture to the desired density (about 2-4 minutes).
