  7. Now, assemble the dish. To do that, put a tortilla on a large plate, spread beans over it, put one or two fried eggs above. Then line the outside part of the tortilla with chorizo and fried plantain. Spoon salsa above the egg. Put sliced avocado on top of it. History of the Huevos MotuleГ±os:

Huevos MotuleГ±os is a famous breakfast dish in the YucatГЎn Peninsula of Mexico, named after the town of Motul. This dish was invented during the Mexican presidency of Porfirio DГaz when the town became a hub for people who traveled through the area. Traditional MotuleГ±o cuisine features hearty, spicy dishes that are known for their complex flavors, and Huevos MotuleГ±os is no exception. The dish is a perfect representation of the history and culture of the YucatГЎn Peninsula.

Tips and Tricks for Huevos MotuleГ±os Recipe:

  1. The refried beans are a primary ingredient in this recipe, so it's essential to get them just right. You can use canned beans for convenience, but homemade refried beans always taste the best. To make homemade refried beans, cook black beans in a pot until they are tender, then mash them with a potato masher.

  2. Epazote leaves add a unique flavor to the beans, but if you can't find them, you can substitute with cilantro.

  3. Chorizo is the traditional sausage used in this recipe. However, if you can't find chorizo, you can also use a different type of spicy sausage.

  4. Be careful not to overcook the eggs. The yolks should be slightly runny to create a sauce for the dish.

  5. For added flavor, you can fry the tortillas in the leftover oil from frying the plantains.

Tips for presenting the dish:

  1. Use a large plate to assemble the dish, making sure to spread the refried beans evenly over the tortilla.

  2. Use a slotted spoon to ladle the salsa over the eggs, so the excess liquid won't make the dish soggy.

  3. Place the chorizo and plantain along the outside of the tortilla, to make for a beautiful presentation.

  4. Crumble the queso fresco on top of the dish, and sprinkle some fresh chopped cilantro over it.

  5. Serve the dish warm, and enjoy the complex flavors and textures that make it a breakfast favorite in the YucatГЎn Peninsula of Mexico.
