This spinach salad is different and so easy to make. Everyone I have made this for raves about it!

Ingredients

  • butter: 1 Tbsp
  • almonds: 0.75 cup (blanched and slivered)
  • spinach, rinsed and torn into bite-size pieces: 1 pound
  • cranberries: 1 cup (dried)
  • vegetable oil: 0.5 cup
  • white sugar: 0.5 cup
  • cider vinegar: 0.25 cup
  • white wine vinegar: 0.25 cup
  • sesame seeds: 2 Tbsp (toasted)
  • poppy seeds: 1 Tbsp
  • onion: 2 tsp (minced)
  • paprika: 0.25 tsp

  1. Melt butter in a medium saucepan over medium heat. Cook and stir almonds in butter until lightly toasted. Remove from heat and let cool.

  2. Make dressing: Whisk together oil, sugar, cider vinegar, white wine vinegar, sesame seeds, poppy seeds, minced onion, and paprika in a medium bowl.

  3. Combine spinach with toasted almonds and cranberries in a large serving bowl. Pour dressing over spinach mixture; toss well.
