Sweet potatoes are delicious on their own, but it’s always tempted to gild the lily just a bit. Here, it’s mashed with butter, maple syrup and thyme to bring out their sweet, earthy flavor. You’ll need to allow one hour of hands-off cooking time to bake the potatoes, but you can make the whole dish ahead of time.

Ingredients

  • sweet potatoes : 3 pound (medium-sized)
  • unsalted butter : 6 Tbsp
  • pure maple syrup : 6 Tbsp
  • milk : 0.5 cup
  • salt : 1 tsp
  • freshly ground black pepper : 0.25 tsp
  • fresh minced thyme : 0.75 tsp (plus a few sprigs for garnish)
