  • potato: 700 g
  • onion: 150 g
  • butter: 20 g
  • vegetable broth: 1 litre
  • cream: 100 ml
  • horseradish: 2 Tbsp (grated)
  • white wine vinegar: 1 tsp
  • salt: 0.5 tsp
  • black pepper: 0.5 tsp
  • smoked trout: 150 g
  • fennel: 1 bunch
