This is one more seafood salad you will certainly enjoy! It tastes so great and consists of several ingredients most people like. The salad is quite easy to cook, so, it can soon become your favorite dish to be served on festive occasions!

Ingredients

  • shrimp: 450 g
  • olive oil: 0.75 cup
  • cannellini white beans: 2 can (rinsed and drained)
  • cherry tomatoes: 1 cup (halved or quartered)
  • red onion: 0.5 cup (finely diced)
  • lemon zest: 0.75 tsp
  • baby arugula leaves: 3 piece (handfulls)
  • red wine vinegar: 3 Tbsp
  • garlic: 2 clove (minced)
  • salt: 0.5 tsp
  • black pepper: 0.25 tsp

Stages of cooking

  1. Start cooking the salad with the shrimps. Heat a large frying pan, add olive oil and heat it on medium fire. As soon as the oil gets hot, add the shrimps and sauté for about one minute on each side. If you wish, you can grill the shrimps instead of frying them. Remove them from fire, when they are ready, and set aside to cool down.

  2. Now, you can start assembling the salad. To do that, take a large bowl and add the drained beans, cut cherry tomatoes, diced onion, lemon zest and arugula leaves. Add the shrimps.

  3. Then take a small bowl and whisk together red wine vinegar, garlic, olive oil, black pepper and salt.
