A refreshing vegetable salad using all different kinds of vegetables. You can use whatever you like, but the tomatoes and cucumbers make it taste great. It is very much like an Israeli salad. The homemade dressing is very good for any green salad.

Ingredients

  • romaine lettuce leaves, torn into bite size pieces: 5 piece
  • radishes: 5 piece (chopped)
  • tomatoes: 2 piece (chopped, fresh)
  • green onion: 2 piece (minced)
  • jicama, peeled and: 1 small (julienned)
  • cucumber: 1 piece (chopped)
  • red bell pepper: 1 piece (chopped)
  • olive oil: 2 Tbsp
  • lemon juice: 1.5 Tbsp
  • pomegranate juice: 1 Tbsp
  • water: 1.5 tsp
  • garlic: 1 clove (minced)
  • dill: 1 tsp (fresh; chopped)
  • basil: 1 tsp (fresh; chopped)
  • salt: 1 tsp
  • ground black pepper: 1 tsp

  1. Place lettuce, radishes, tomatoes, green onion, jicama, cucumber, and bell pepper in a large salad bowl.
