Ingredients

  • almond milk: 240 g
  • sugar: 110 g
  • oil: 20 g
  • vanilla essence: 0.5 tsp
  • lemon zest: 1 Tbsp
  • wheat flour: 230 g
  • baking powder: 16 g
  • sugar: 60 g (for the jam)
  • orange juice: 60 g
  • black currant: 160 g
  • dark chocolate: 100 g (optional)
  • coconut milk: 100 g

  1. Prepare a dough: sugar, milk, oil, vanilla extract and half a lemon zest put in a bowl and stir until sugar dissolves.

  3. Grease the baking dish (diameter 20 cm) with oil and pour the dough into it. Cook the cake for 25-30 minutes in a preheated to 160C oven.

  4. Ready biscuit gently remove from the baking dish.

  5. While the biscuit cools down, prepare jam: combine the juice and sugar in a saucepan, bring to a boil.

  6. Add berries, mix well in syrup. Bring to a boil and cook over medium heat for about 8 minutes.

  7. Cool the jam.

  8. Cut the cooled cake in 2 parts. Cover the bottom part evenly with jam. Gently place the upper half of the cake on its bottom part.

  9. For chocolate sauce (optional) chop the chocolate. Heat coconut milk (you can boil it), pour chocolate over the milk and mix to a smoth mass.

  10. In order to make the sauce thicker, it can be put for 10-15 minutes in the fridge.
