This dish is very healthy, easy and absolutely exquisite. Vegan pasta is not only tasty side-dish but also a well of vitamins. Besides, you may experiment by adding different species and vegetables on your choice. Create your own way of cooking this dish.

Ingredients

  • olive oil: 5 Tbsp
  • thyme: 0.3 tsp (dried)
  • rosemary: 0.3 tsp (dried)
  • oregano: 0.3 tsp (dried)
  • black pepper: 1 pinch
  • salt: 1 pinch
  • garlic: 3 clove
  • bulb onion: 3 piece (medium)
  • eggplant: 1 piece
  • tomatoes: 3 piece
  • carrots: 1 piece
  • pasta: 400 g

  1. Peel all vegetables and then wash. Cut eggplant, tomatoes.

  2. Grate carrot and slice garlic and bulb onion.
