This dish is very healthy, easy and absolutely exquisite. Vegan pasta is not only tasty side-dish but also a well of vitamins. Besides, you may experiment by adding different species and vegetables on your choice. Create your own way of cooking this dish.
- olive oil : 5 Tbsp
- dried thyme : 0.3 tsp
- dried rosemary : 0.3 tsp
- dried oregano : 0.3 tsp
- black pepper : 1 pinch
- salt : 1 pinch
- garlic : 3 clove
- bulb onion : 3 piece (medium)
- eggplant : 1 piece
- tomatoes : 3 piece
- carrots : 1 piece
- pasta : 400 g
Stages of cooking
Peel all vegetables and then wash. Cut eggplant, tomatoes.
Grate carrot and slice garlic and bulb onion.
Place a frying pan on a medium heat, pour in olive oil and first fry garlic with all dried species during 2 minutes.
Add bulb onion and carrot. Fry everything during 2 minutes.
After this add eggplant, reduce heat and fry during 5 minutes.
The last add tomatoes, stir ingredients, cover with lid and stew during 10-15 minutes.
Thus the vegetable dressing is ready.
Take a pan, boil in water. Add salt and cook pasta, stirring from time to time.
Lay pasta on a plate and cover it with dressing. It is ready to be served.
