  • eggplant: 900 g (or 2 large eggplants)
  • olive oil: 2 Tbsp
  • kosher salt: 1.5 tsp
  • bell pepper: 1 piece (red, medium)
  • garlic: 3 clove
  • olive oil: 3 Tbsp
  • balsamic vinegar: 1 tsp
  • basil: 2 Tbsp (fresh, minced)
  • salt: 0.5 tsp
  • black pepper: 1 pinch

Stages of cooking

  1. Prior to cooking the dish, pre-heat the oven to 205 C (400 F).  Slice the eggplants lengthwise into 2 halves. Poke the skin of the eggplants with a fork and make the cuts on the other side. Take a baking pan, cover it with baking paper and place the eggplants above. Sprinkle with olive oil, salt and bake in the oven for about 30-35 minutes or until the eggplants become soft. You can also grill the eggplants instead of baking them.

  2. As soon as the eggplants are ready, peel them off. Then roast or grill the red bell pepper. You can follow the instructions specified in step 1. As soon as the bell pepper is ready, peel it well, remove the seeds and the stem.

  3. Process garlic, roasted bell pepper and eggplant in a blender to get the smooth mass.

  4. Put the mixture you have got into a large bowl. Add olive oil, salt, balsamic vinegar, minced basil and black pepper. Stir the ingredients well. Serve with toasts, crackers, pita chips, cucumber or celery sticks. Enjoy!
