  • salt: 2 pinch
  • black pepper: 2 pinch (per taste)
  • basil: 10 g
  • mozzarella: 150 g
  • olive oil: 3 Tbsp
  • tomatoes: 4 piece
  • eggplant: 2 piece

  1. Pre-heat the oven to 200C (390F) degrees. Wash eggplants and then dry with a kitchen towel, then cut lengthwise.

  2. Spread olive oil with kitchen brush all over the eggplants. Place eggplants on a tray and put in the oven for about 25 minutes.

  3. Slice tomatoes and mozzarella. Take the tray with eggplants out of the oven place tomatoes and mozzarella slices all over them and put again in the oven for 5-7 minutes.

  4. Sprinkle salt and pepper all over the eggplants, garnish with basil and serve!
