Authentic Cajun flavor! I grew up in Louisiana and love red beans and rice; these are just like I remember. Serve with hot sauce for a little kick. My family loved to splash a little cider vinegar in each bowl.

Ingredients

  • dry kidney beans: 1 pound
  • olive oil: 0.25 cup
  • onion: 1 piece (chopped)
  • green bell pepper: 1 piece (chopped)
  • stalks celery: 2 piece (chopped)
  • garlic: 2 Tbsp (minced)
  • water: 6 cups
  • bay leaves: 2 piece
  • parsley: 1 Tbsp (dried)
  • thyme: 1 tsp (dried)
  • Cajun seasoning: 1 tsp
  • cayenne pepper: 0.5 tsp
  • sage: 0.25 tsp (dried)
  • andouille sausage: 1 pound (sliced)
  • water: 4 cups
  • long grain white rice: 2 cups

  4. Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, parsley, thyme, Cajun seasoning, cayenne pepper, and sage.
