Ingredients

  • ½ cups tomato-vegetable juice cocktail (such as V8®): 2 piece
  • ½ cups vegetable broth: 2 piece
  • tomatoes: 3 piece (diced)
  • avocados - peeled, pitted, and: 3 piece (cut into bite-size pieces)
  • cucumber: 1 cup (diced)
  • tomatoes with juice: 1 can (8 ounce can, chopped)
  • green bell pepper: 0.5 cup (chopped)
  • red bell pepper: 0.5 cup (chopped)
  • extra-virgin olive oil: 0.25 cup
  • green onions: 3 piece (sliced)
  • lemon: 1 piece (juiced, to taste)
  • fresh cilantro: 2 Tbsp (minced)
  • white wine vinegar: 2 Tbsp
  • dash hot pepper sauce (such as Tabasco®): 1 piece (to taste)
  • salt and ground black pepper: (to taste)

  1. Mix tomato-vegetable juice, vegetable broth, tomatoes, avocados, cucumber, canned tomatoes with juice, green bell pepper, red bell pepper, olive oil, green onions, lemon juice, cilantro, vinegar, hot pepper sauce, salt, and black pepper together in a large bowl. Cover and chill for at least 3 hours before serving to allow flavors to blend.
