This is a Middle Eastern-style bean salad that is full of flavor.

Ingredients

  • garbanzo beans: 2 cans (15 ounce cans, drained and rinsed)
  • black beans: 2 cans (15 ounce cans, drained and rinsed)
  • (packed) chopped fresh mint: 0.5 cup
  • (packed) chopped fresh parsley: 0.5 cup
  • onion: 0.5 cup (chopped)
  • pint grape tomatoes: 1 piece (halved)
  • jalapeño pepper: 1 piece (chopped)
  • clove garlic: 1 piece (minced)
  • olive oil: 0.25 cup
  • lemon juice: 3 Tbsp
  • apple cider vinegar: 5 Tbsp
  • salt and ground black pepper: (to taste)

  1. In a salad bowl, lightly mix together the garbanzo beans, black beans, mint, parsley, onion, and grape tomatoes.

  2. Place the jalapeno pepper, garlic, olive oil, lemon juice, and apple cider vinegar into a blender, and blend until thoroughly combined. Pour the dressing over the salad, and toss to mix; sprinkle with salt and black pepper to serve.
