Tasty butternut squash fritters are the perfect fall appetizer or snack. Serve with a garlicky yogurt dip or dip of choice.

Ingredients

  • butternut squash: 3 cups (shredded)
  • sharp white Cheddar cheese: 1 cup (shredded)
  • all purpose flour: 0.66667 cup
  • eggs, lightly: 2 piece (beaten)
  • 1/2 teaspoons chopped fresh thyme: 1 piece
  • salt, plus more for sprinkling: 0.5 tsp
  • black pepper: 0.25 tsp (freshly ground)
  • vegetable oil: 2 Tbsp (or more if needed)
