These freezer energy balls are sweetened with peanut butter and honey.

Ingredients

  • carrots: 1 cup (finely shredded)
  • quick-cooking steel-cut oats: 0.5 cup
  • flax seed meal: 0.25 cup
  • peanut butter: 0.25 cup
  • honey: 3 Tbsp
  • walnuts: 2 Tbsp (chopped)
  • raisins: 2 Tbsp (chopped)
  • vanilla extract: 1 tsp
  • ground cinnamon: 0.5 tsp
  • ground ginger: 0.5 tsp
  • salt: 0.125 tsp

  1. Line a baking sheet with parchment paper and set aside.

  2. Combine carrots, oats, flax meal, peanut butter, honey, walnuts, raisins, vanilla, cinnamon, ginger, and salt in a bowl. Beat with a hand mixer until well combined.
