This recipe uses rotisserie chicken to create an easy and delicious bacon lettuce wrap including avocado.

Ingredients

  • slices bacon: 2 piece
  • rotisserie chicken: 0.33333 cup (shredded)
  • coarse salt and ground black pepper: (to taste)
  • avocado: 1 piece
  • lemon juice: 1 Tbsp
  • clove garlic: 1 piece (minced)
  • tomato: 1 piece (chopped)
  • onion: 1 piece (chopped)
  • lettuce leaves: 2 piece (or as needed)

  1. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving grease in skillet.

  2. Add chicken to skillet and stir to coat with bacon drippings. Season with salt and pepper.

  3. Mash avocado in a bowl and season with lemon juice, garlic, salt, and pepper. Add tomato and onion to taste.
