Traditionally made with chickpeas, this hummus has a new twist using shelled edamame. Serve with pita chips or celery sticks.

Ingredients

  • frozen shelled edamame (green soybeans): 1 pack (12 ounce pack)
  • garlic: 2 clove
  • tahini: 0.5 cup
  • water: 0.5 cup
  • packed cilantro leaves: 0.5 cup
  • lemon juice: 0.25 cup
  • extra-virgin olive oil: 3 Tbsp
  • kosher salt: 1 tsp
  • ground cumin: 0.75 tsp
  • cayenne pepper: 0.125 tsp

  1. Place edamame into a large pot and cover with salted water. Bring to a simmer over medium-low heat and cook until tender, about 5 minutes; drain.

  2. Purée garlic in a food processor until minced. Add drained edamame, tahini, water, cilantro, lemon juice, olive oil, kosher salt, cumin, and cayenne pepper; blend until smooth.
