I created this cilantro-lime dressing after having a delicious grilled chicken salad at TGI Friday's. I was determined to figure out how to make their cilantro-lime dressing, and this is what I came up with. Serve it over a hearty green salad topped with grilled chicken.

Ingredients

  • medium jalapeno pepper, seeded and: 1 piece (chopped)
  • clove garlic: 1 piece
  • fresh ginger root: 0.75 tsp (minced)
  • honey: 0.33333 cup
  • lime juice: 0.25 cup
  • packed cilantro leaves: 0.25 cup
  • balsamic vinegar: 2 tsp
  • salt: 0.5 tsp (to taste)
  • extra-virgin olive oil: 0.5 cup

  1. Pulse jalapeño, garlic, and ginger in a food processor until finely chopped. Add honey, lime juice, cilantro, vinegar, and salt; pulse 3 to 4 times to blend. Pour oil in slowly, with the processor running, until dressing is smooth. Taste and season with salt if needed before serving. Life Tastes Good
