This recipe is a fresh take on a classic cucumber and tomato salad. My dad used to make that for me as a child. Adding the watermelon gives it a twist. It is the perfect combination of sweet and tangy and a great summer snack!

Ingredients

  • cucumber, halved lengthwise and thinly sliced crosswise: 1 piece
  • medium tomatoes: 2 piece (diced)
  • onion: 1 piece (sliced)
  • seedless watermelon: 2 cups (cubed)
  • red wine vinegar: 3 Tbsp
  • olive oil: 2 Tbsp
  • sea salt: 1 tsp
  • white sugar: 1 tsp
  • oregano: 0.5 tsp (dried)
  • basil: 0.5 tsp (dried)
  • ground thyme: 0.5 tsp
  • ground black pepper: 0.5 tsp

  1. Combine cucumber, tomatoes, onion, and watermelon in a large bowl.

  2. Mix vinegar, olive oil, salt, sugar, oregano, basil, thyme, and pepper together in a separate, smaller bowl and pour over salad. Stir to coat well.
