Serve these fun and easy egg tacos with your favorite toppings for the full taco treatment that kids love.

Ingredients

  • vegetable oil: 2 tsp
  • red or green pepper: 0.5 piece (diced)
  • jalapeño pepper: 0.5 piece (diced)
  • clove garlic: 1 piece (minced)
  • ham: 0.66667 cup (diced)
  • chili powder: 0.5 tsp
  • eggs: 4 piece
  • salt: 0.25 tsp
  • black pepper: 0.25 tsp
  • butter: 2 tsp
  • whole wheat or regular flour tortillas, warmed: 4 piece
  • Tex-Mex or Cheddar cheese: 0.5 cup (shredded)
  • green onions: 2 piece (chopped)
  • salsa: 0.25 cup
  • fresh coriander: 1 Tbsp (chopped)

  1. Heat oil in a medium nonstick skillet over medium heat. Sauté red bell pepper, jalapeño pepper, and garlic until softened, about 2 minutes. Add ham and chili powder; sauté until heated through, about 2 minutes. Remove ham mixture to a bowl; cover to keep warm.

  2. Whisk eggs, salt, and pepper in a small bowl or measuring cup.

  3. Melt butter in the same skillet over medium heat; add eggs and cook, stirring gently, until set but still soft, about 2 minutes.
