This gazpacho with tomato juice is a wonderful cold soup full of fresh Mediterranean vegetables. Quick and easy!

Ingredients

  • tomato juice: 4 cups
  • tomatoes: 2 cups (chopped)
  • onion: 1 piece (minced)
  • green bell pepper: 1 piece (minced)
  • cucumber: 1 piece (chopped)
  • green onions: 2 piece (chopped)
  • fresh parsley: 0.25 cup (chopped)
  • lemon juice: 3 Tbsp (fresh)
  • red wine vinegar: 2 Tbsp
  • clove garlic: 1 piece (minced)
  • tarragon: 1 tsp (dried)
  • basil: 1 tsp (dried)
  • white sugar: 1 tsp
  • salt and pepper: (to taste)

  1. Combine tomato juice, tomatoes, onion, bell pepper, cucumber, green onions, parsley, lemon juice, red wine vinegar, garlic, tarragon, basil, sugar, salt, and pepper in a blender or food processor. Blend until well combined but still slightly chunky.

  2. Pour into a serving bowl and cover. Place in the refrigerator to chill before serving, at least 2 hours.
