An easy Hoppin' John recipe for weeknight dinner that my kids love. Have it with a nice salad, and dinner is done. The red pepper should be adjusted to fit your family's taste.

Ingredients

  • smoked beef sausage: 1 pound (cut into bite-size pieces)
  • onion: 1 piece (chopped)
  • black-eyed peas: 3 cans (15 ounce cans, drained)
  • low sodium chicken stock: 2 cans (10.75 ounce cans)
  • water: 1 cup
  • cayenne pepper: 0.5 tsp (to taste)
  • uncooked instant rice: 2 cups
