This was given to me by a friend years ago. I have since tweaked it to my liking and think you will like it also. I have eaten it many times with fried tilapia. I call them Hawaiian hush puppies because that's what they remind me of with the pineapples and slight sweetness.

Ingredients

  • oil for deep frying:
  • cream-style corn: 1 can (15 ounce can, drained)
  • pineapple: 1 can (15 ounce can, drained, crushed)
  • cornmeal: 2 cups
  • self-rising flour: 1 cup
  • cheddar cheese: 1 cup (shredded)
  • onion: 0.5 cup (minced)
  • white sugar: 0.5 cup
  • eggs: 2 piece (beaten)
  • pinch salt and ground black pepper: 1 piece (to taste)
