This is the best soup I have ever had. It has lots of vegetables, Italian sausage, and even tortellini. Soup is one of my favorite foods and this recipe tops the list.

Ingredients

  • link sweet Italian sausage, casings removed: 1 piece (3.5 ounce)
  • onions: 1 cup (chopped)
  • garlic: 2 clove (minced)
  • beef stock: 5 cups
  • water: 0.33333 cup
  • red wine: 0.5 cup
  • tomatoes: 4 piece (peeled, chopped)
  • carrots: 1 cup (chopped)
  • basil: 0.5 tsp (dried)
  • oregano: 0.5 tsp (dried)
  • tomato sauce: 1 cup
  • zucchini: 1 piece (chopped)
  • ounces cheese tortellini: 8 piece
  • green bell pepper: 1 piece (chopped)
  • fresh parsley: 1 Tbsp (chopped)
  • Parmesan cheese: 2 Tbsp (for topping, grated)

  1. Place sausage in a large pot over medium-high heat and sauté for 10 minutes, or until well browned. Drain the fat except for about 1 tablespoon, add onions and garlic and sauté for 5 more minutes.

  2. Next add beef stock, water, wine, tomatoes, carrots, basil, oregano, and tomato sauce. Bring to a boil, reduce heat to low and simmer for 30 minutes, skimming any fat that may surface.

  3. Add zucchini, tortellini, green bell pepper, and parsley to taste. Simmer for 10 minutes, or until tortellini is fully cooked. Pour into individual bowls and garnish with cheese.
