This Japanese mushroom soup is a quick, healthy dish that is very popular in Japanese cuisine. It features miso which is a fermented soybean paste that adds a rich flavor.

Ingredients

  • prepared dashi stock: 3 cups
  • shiitake mushrooms: 0.25 cup (sliced)
  • miso paste: 1 Tbsp
  • soy sauce: 1 Tbsp
  • soft tofu: 0.125 cup (cubed)
  • green onion: 1 piece (chopped)
