  • bananas: 3 piece (mashed)
  • white sugar: 1 cup
  • eggs, lightly: 2 piece (beaten)
  • vegetable oil: 0.75 cup
  • all-purpose flour: 2 cups
  • baking soda: 2 tsp
  • buttermilk: 3 Tbsp
  • pecans: 1 cup (chopped, optional)
  • confectioners' sugar: 1 cup (or as needed)

  1. Preheat oven to 300 degrees F (150 degrees C). Grease 14 muffin cups.
