I can no longer find my favorite coffee and chocolate granola in stores anymore, so decided to try and replicate it by using the ingredient list and tweaking several different recipes. This is the end result that I enjoy having with milk or as a topping for chocolate pudding or coffee ice cream.

Ingredients

  • rolled oats: 2 cups
  • coconut oil: 0.5 cup (melted)
  • hazelnuts: 0.5 cup (chopped, optional)
  • cocoa nibs: 0.25 cup
  • maple syrup: 3 Tbsp
  • ground coffee beans: 2 Tbsp (fresh)
  • dark brown sugar: 2 Tbsp
  • ½ tablespoons unsweetened cocoa powder: 1 piece
  • instant coffee granules: 2 tsp
  • coffee-flavored extract: 2 tsp
  • ½ teaspoons kosher salt: 1 piece
  • ground cinnamon: 1 tsp
  • ground black pepper: 0.5 tsp
  • vanilla extract: 0.5 tsp
  • miniature chocolate chips: 0.25 cup
