Are you tired of the same old mayo chicken salad you've been making for years? This tastes light and fresh, and it just might become your favorite chicken salad. This is a perfect way to use rotisserie chicken, and that makes preparation even easier.

Ingredients

  • olive oil: 3 Tbsp
  • red wine vinegar: 1 Tbsp
  • Dijon mustard: 1 tsp
  • hot honey (such as Mike's Hot Honey®): 1 tsp
  • salt and freshly ground black pepper: (to taste)
  • Chicken Salad::
  • cooked, shredded chicken: 2 cups
  • (1/4 inch thick) slices lightly toasted French bread, cut into very small cubes: 2 piece
  • tomatoes on the vine: 2 piece (diced)
  • onion: 1 piece (sliced)
  • celery: 2 Tbsp (minced)
  • cilantro: 2 Tbsp (chopped)
  • pimento-stuffed olives: 10 piece (halved)
  • mini croissants: 8 piece

  1. Whisk together olive oil, red wine vinegar, Dijon mustard, hot honey, salt, and pepper in a small bowl until well combined; set aside.
