Pesto rice made with white rice, store-bought, onion, and a touch of lemon is a great side dish with fish or chicken.

Ingredients

  • butter: 1 Tbsp
  • onion: 0.5 cup (finely chopped)
  • 1/2 cups dry long grain white rice: 1 piece
  • water: 3 cups
  • salt: 0.5 tsp
  • black pepper: 0.25 tsp (freshly ground)
  • (6- to 7-ounce) jar basil pesto: 1 piece
  • lemon zest: 1 tsp
