Pinakbet is a vegetable-based dish from the Philippines that can be served as an everyday dish or when you have company. Since it also contains pork and prawns, you can eat it as a one-pot meal.

Ingredients

  • olive oil: 3 Tbsp
  • onion: 1 piece (chopped)
  • garlic: 2 clove (minced)
  • pork loin: 0.5 pound (chopped)
  • prawns: 0.5 pound (peeled and deveined)
  • salt and pepper: (to taste)
  • tomato: 1 piece (chopped)
  • zucchini, seeded and: 0.25 pound (cut into bite-size pieces)
  • okra, ends: 0.25 pound (trimmed, fresh)
  • green beans: 0.25 pound (trimmed, fresh)
  • eggplant: 0.25 pound (cut into bite-size pieces)
  • bitter melon: 1 piece (cut into bite-size pieces)
