I made this pork and broccoli dish one night when I had leftover pork roast cooked in my slow cooker and frozen. Pork, broccoli, and rice with a hint of curry. It's very homey and easy to make ahead of time.

Ingredients

  • water: 2 cups
  • uncooked white rice: 1 cup
  • ½ pounds leftover roast pork: 1 piece (cubed)
  • condensed cream of celery soup: 2 cans (10.75 ounce cans)
  • mayonnaise: 0.5 cup
  • ground black pepper: 0.5 tsp
  • curry powder: 0.5 tsp
  • frozen broccoli: 1 pack (10 ounce pack, thawed)
