A simple and easy and oh-so-good shrimp quiche.

Ingredients

  • baked pie shell: 1 piece (9 inch)
  • ounces small, cooked shrimp: 4 piece (peeled and deveined)
  • Gruyère cheese: 0.66667 cup (grated)
  • eggs: 2 piece (beaten)
  • light sour cream: 1 cup
  • green onion: 1 Tbsp (finely chopped)
  • salt and pepper: (to taste)

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Spread shrimp evenly across the bottom of the pie crust. Sprinkle cheese over the shrimp.

  3. Stir sour cream, green onions, salt and pepper into the beaten eggs; then pour mixture evenly over the shrimp and cheese.
