  • olive oil: 2 Tbsp
  • red bell pepper, cut into thin matchsticks: 0.5 cup
  • onion: 0.5 cup (chopped)
  • eggs: 3 piece
  • milk: 0.5 cup
  • frozen chopped spinach, thawed and squeezed dry: 1 pack (10 ounce pack)
  • cooked ham: 1 cup (chopped)
  • mozzarella cheese: 0.5 cup (shredded)
  • crumbled feta cheese: 0.5 cup
  • salt: 0.5 tsp
  • ground black pepper: 0.25 tsp

  1. Heat olive oil in a skillet over medium heat. Add red pepper and onion. Cook and stir until tender, about 5 minutes.
