Refreshing summer salad of watermelon and blue cheese. Great for summer picnics.

Ingredients

  • light olive oil: 0.5 cup
  • white balsamic vinegar: 0.25 cup
  • salt and ground black pepper: (to taste)
  • watermelon, cut into bite-size cubes: 5 pound
  • sweet onion (such as Vidalia®): 1 piece (sliced)
  • fresh mint: 2 Tbsp (to taste, chopped)
  • ounces crumbled blue cheese: 6 piece

  1. Whisk olive oil, vinegar, salt, and pepper together in a bowl until smooth.
