This tomato, avocado, feta salad is extremely good. It's amazing how the cilantro flavor does not overpower the salad.

Ingredients

  • roma (plum) tomatoes: 8 piece (diced)
  • Jalapeno peppers: 3 piece (diced)
  • bunches green onion: 3 piece (sliced)
  • ounces crumbled garlic and herb feta cheese: 4 piece
  • avocados: 4 piece (diced)
  • lemon juice: 2 Tbsp (fresh)
  • bunches cilantro: 3 piece (chopped)
  • salt and ground black pepper: (to taste)

  1. Combine tomatoes, jalapeño peppers, green onion, and feta cheese in a large bowl; toss together. Add diced avocado; drizzle lemon juice over avocado to keep it from turning brown. Stir in cilantro. Season with salt and pepper. Mix well and serve.
