One of Grandma Dorothy's much sought-after recipes is for Dad's cookies. These oatmeal cookies are wonderfully chewy and are made with oil instead of butter or margarine, appealing to the health-conscious. One cookie is never enough!

Ingredients

  • ½ cups all-purpose flour: 1 piece
  • baking soda: 1 tsp
  • salt: 0.75 tsp
  • white sugar: 1 cup
  • brown sugar: 1 cup
  • ½ cups rolled oats: 1 piece
  • flaked coconut: 0.5 cup
  • vegetable oil: 0.75 cup
  • eggs: 2 piece
  • vanilla extract: 1 tsp

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.

  2. Stir together flour, baking soda, salt, white sugar, brown sugar, oats, and coconut in a large bowl. Make a well in the center and pour in oil, eggs, and vanilla. Mix well using your hands or a wooden spoon.
