This simple arugula salad is so easy even I can make it — and I'm a beginning cook! It looks very presentable for guests and takes only minutes to make.

Ingredients

  • young arugula leaves, rinsed and: 4 cups (dried)
  • cherry tomatoes: 1 cup (halved)
  • pine nuts: 0.25 cup
  • Parmesan cheese: 0.25 cup (grated)
  • grapeseed or olive oil: 2 Tbsp
  • rice vinegar: 1 Tbsp
  • salt and freshly ground black pepper: (to taste)
  • avocado: 1 piece (sliced)

  1. Combine arugula, tomatoes, pine nuts, Parmesan, oil, and vinegar in a large, lidded plastic bowl. Season with salt and pepper, then cover with the lid and shake to mix.
