Quick and easy shrimp fajitas on the grill. Don't forget your favorite toppings such as guacamole, salsa, and sour cream.

Ingredients

  • red bell pepper, sliced into thin strips: 1 piece
  • green bell pepper, sliced into thin strips: 1 piece
  • onion, sliced into thin strips: 1 piece
  • jalapeño pepper: 1 piece (sliced, fresh)
  • ½ teaspoons fajita seasoning mix: 2 piece (divided)
  • olive oil: 1 tsp
  • ounces raw large shrimp: 12 piece (peeled and deveined)
  • lime juice: 1 Tbsp
  • fajita-size flour tortillas: 8 piece (6 inch)

  1. Preheat an outdoor grill for medium-high heat and lightly oil the grate.

  2. Place bell pepper strips, onion, and jalapeno slices in a large bowl. Add 2 teaspoons of fajita seasoning and olive oil. Stir until evenly combined.

  3. Place shrimp in a separate bowl. Add remaining 1/2 teaspoon fajita seasoning and lime juice. Gently stir until evenly combined.

  4. Place vegetable mixture in a grill basket. Grill for 10 minutes. Stir in shrimp and grill for 5 minutes more. Remove basket from the grill.

  5. Place tortillas on the grill and toast for 2 minutes. Divide filling between the tortillas and serve.
