This quick and delicious recipe uses tempeh (cultured tofu) instead of meat for a healthy, tasty alternative.

Ingredients

  • corn oil: 2 Tbsp
  • tempeh, broken into bite-sized pieces: 1 pack (8 ounce pack)
  • soy sauce: 2 Tbsp
  • lime juice: 1 Tbsp
  • ½ cups chopped green bell pepper: 1 piece
  • mushrooms: 1 can (4.5 ounce can, drained, sliced)
  • frozen chopped spinach: 0.5 cup (drained)
  • green Chili peppers: 1 Tbsp (chopped)
  • fresh cilantro: 1 Tbsp (chopped)
  • minced onion: 1 Tbsp (dried)

  1. Heat oil in a large skillet over medium heat. Saute tempeh with soy sauce and lime juice until tempeh browns. Stir in bell peppers, mushrooms, spinach, chile peppers, cilantro and dried onion.
