  • olive oil, divided: 2 Tbsp
  • onion, diced: 1 piece
  • garlic, crushed: 6 clove
  • ground coriander: 2 tsp
  • ground turmeric: 2 tsp
  • garam masala: 2 tsp
  • red pepper flakes: 2 tsp
  • curry powder: 2 tsp
  • ground cumin: 2 tsp
  • salt: 1 tsp
  • water: 1 cup
  • (10 ounce) packages frozen chopped spinach, thawed and drained: 2 packages
  • tomatoes, diced: 3 piece
  • grated fresh ginger root: 2 Tbsp
  • cubed paneer: 2 cups
