My kids and I love having these peanut butter energy balls on hand. They make for an easy and quick protein or bite of energy during the day. My husband also loves having these treats in his lunch box at work.

Ingredients

  • rolled oats: 2 cups
  • peanut butter: 1 cup
  • walnuts: 1 cup (crushed)
  • semisweet chocolate chips: 0.5 cup
  • honey: 0.25 cup (or more if needed)

  1. Combine oats, peanut butter, crushed walnuts, chocolate chips, and honey in the bowl of a stand mixer fitted with the paddle attachment; beat until well combined, adding more honey if the mixture is not holding together.
