Standard energy bites recipe kicked up with the addition of protein powder and chopped coffee beans and coconut. Super pre- or post-workout snack. Store balls in freezer or fridge and thaw for use.

Ingredients

  • rolled oats: 2 cups
  • peanut butter: 1 cup
  • honey: 0.66667 cup
  • dark chocolate chips: 0.5 cup
  • ground flax seeds: 0.5 cup
  • chocolate-flavored protein powder: 0.5 cup
  • unsweetened shredded coconut: 0.5 cup
  • chia seeds: 2 Tbsp
  • coconut extract: 1 tsp
  • coffee beans: 0.25 cup (chopped)
  • cocoa powder (such as Fry's®): 2 Tbsp (or more if needed)

  1. Mix oats, peanut butter, honey, dark chocolate chips, flax seeds, protein powder, coconut, chia seeds, and coconut extract together in a large bowl; fold in coffee beans. Form mixture into 1-inch balls.
