These fat-free refried beans are great to use in enchiladas, tacos, or even as a spread.

Ingredients

  • canned black beans: 2 cups (divided)
  • water: 0.5 cup
  • garlic: 2 clove (minced)
  • pepper: 1 tsp
  • salt: 1 tsp
  • liquid smoke flavoring: 1 tsp
  • onion: 0.75 cup (diced)

  1. Mash 2/3 cup beans in a small bowl to a smooth paste; set aside.

  2. Place remaining beans and water in a medium saucepan over medium heat. Cook at a simmer until heated through. Stir in garlic, pepper, salt, and liquid smoke.
