This classic King Ranch chicken casserole is bursting with chicken, corn tortillas, tomatoes, peppers, and cheesy goodness. From what I hear, it's impossible to go to any sort of potluck in Texas and not see one of these.

Ingredients

  • vegetable oil: 1 Tbsp
  • medium white onion: 1 piece (diced)
  • medium red bell pepper: 1 piece (diced)
  • medium green bell pepper: 1 piece (diced)
  • condensed cream of mushroom soup: 1 can (10.5 ounce can)
  • condensed cream of chicken soup: 1 can (10.5 ounce can)
  • tomatoes with green Chili peppers (such as RO*TEL®): 1 can (10 ounce can, diced)
  • chicken broth: 1 cup
  • sour cream: 2 Tbsp
  • ground cumin: 2 tsp
  • ancho Chili powder: 1 tsp
  • oregano: 0.5 tsp (dried)
  • chipotle Chili powder: 0.25 tsp
  • cooked chicken, torn into shreds or cut into chunks: 1 piece (3 pound)
  • cheddar cheese: 1 pack (8 ounce pack, shredded)
  • corn tortillas, cut into quarters: 10 piece (6 inch)

  1. Preheat the oven to 350 degrees F (175 degrees C).
