This Rainbow Vegetarian Pad Thai is packed full of colorful veggies and tossed in a deliciously tangy and sweet sauce. It’s the perfect vegetarian alternative to classic pad thai and makes for a healthy and flavorful weeknight meal.

Ingredients

  • ounces of brown rice noodles: 4 piece
  • red bell pepper: 1 piece (sliced)
  • carrots: 2 piece (shredded)
  • zucchini: 1 piece (julienned)
  • yellow bell pepper: 1 piece (sliced)
  • green onions: 2 piece (chopped)
  • handful of fresh cilantro: 1 piece (chopped)
  • handful of fresh basil: 1 piece (torn)
  • vegetable oil: 3 Tbsp
  • garlic: 3 clove (minced)
  • hot sauce (like Sriracha): 1 Tbsp
  • brown sugar: 2 Tbsp
  • soy sauce: 3 Tbsp
  • lime: 1 piece (juiced)
