These parfaits piled high with fresh raspberries and liqueur-infused whipped cream make a light and elegant summer dessert. They take just 15 minutes to throw together, yet everyone will ooh and ahh and scrape their glass clean. It’s the jazzed-up whipped cream that makes the parfaits special: cream cheese adds extra body and tang (and also stabilizes the whipped cream so the dessert holds up longer) and a splash of liqueur elevates the flavor. This would be a fabulous easy dessert to make in large quantities for a summer party — and you could make your life even easier by assembling the parfaits in disposable plastic wine glasses. Feel free to swap the raspberries for other berries or experiment with different liqueurs.

Ingredients

  • cream cheese: 4 oz (at room temperature)
  • orange- or almond-flavored liqueur: 2 Tbsp (Note: It's okay to leave out the liqueur if you are avoiding alcohol.)
  • sugar: 0.5 cup
  • heavy cream: 0.5 cup
  • fresh raspberries: 3 cup
  • mint: 4 sprigs (small, for garnish)

  6. Distribute half of the raspberries among the bottom of the glasses or dessert cups, then distribute two-thirds of the cream mixture so that it covers the berries in each portion. Distribute the remaining berries evenly among the glasses or dessert cups, gently placing them on the layer of cream. Spoon equal amounts of the remaining cream on top of each portion.

History of the Raspberry & Cream Parfaits The origins of parfaits date back to France in the late 19th century when they were known as "parfait glacГ©" or frozen parfait. These were made with sugar syrup, whipped cream, and flavored ice cream, frozen and layered in a tall, thin glass. Over time, the dessert evolved into a more layered and elaborate dish, with a variety of ingredients and flavors. The use of fresh fruit, such as raspberries, gives this classic dessert a fresh and summery twist.

Tips and Tricks for Raspberry & Cream Parfaits Recipe

To ensure your parfaits come out perfectly every time, here are some tips and tricks to keep in mind:

  • Make sure the cream cheese is at room temperature before starting. This will make it easier to blend with the other ingredients and create a smooth mixture.
  • Don't overmix the cream. Mix the cream just until it reaches a thick, pudding-like consistency. Overmixing can cause the cream to become too thick and heavy.
  • Use fresh, ripe raspberries. This will give your parfaits a sweet, juicy flavor. If raspberries are not in season, you can substitute with other berries like strawberries or blueberries.
  • Chill the parfaits for at least an hour before serving. This will allow the flavors to meld together and the cream to set properly.

Tips for presenting the dish The Raspberry & Cream Parfaits make a stunning and elegant dessert that is perfect for special occasions or dinner parties. Here are some tips for presenting the dish:

  • Use clear, tall glasses or dessert cups to showcase the beautiful layers of cream and raspberries.
  • Top each parfait with a sprig of fresh mint for a pop of color and flavor.
  • Serve with a small cookie or biscuit on the side for added crunch and texture.

With these tips and tricks, you can create a beautiful and delicious Raspberry & Cream Parfait that will impress your guests and leave them asking for the recipe.
