This French onion soup is similar to what you can get in a restaurant. It is made with wine and sherry to bring out the beef flavor of the broth and topped with two kinds of cheese to give it that bubbly, browned, stretchy topping.

Ingredients

  • butter: 0.5 cup
  • onions: 8 piece (sliced)
  • garlic: 2 clove (crushed)
  • thyme: 1 tsp (dried)
  • salt: 0.5 tsp (to taste)
  • ground black pepper: 0.5 tsp (to taste)
  • red wine: 1 cup
  • sherry: 1 Tbsp
  • all-purpose flour: 2 Tbsp
  • quarts beef broth: 2 piece
  • French baguette, cut into 1/2-inch thick slices: 1 piece
  • olive oil: 2 Tbsp (or as needed)
  • slices Swiss cheese: 6 piece
  • slices provolone cheese: 6 piece

  3. Meanwhile, preheat the oven to 350 degrees F (175 degrees C).

  6. Set an oven rack about 8 inches from the heat source and preheat the oven's broiler.
